A traditional breakfast
We are expecting our guests every morning in our cozy breakfast hall with a playful atmosphere.
We serve home-made breakfast which we prepare for you every morning with our own products.
In the “Wild Duck” we accept our guests in the morning, serving homemade breakfast, which we make in our place every day using our own products. From our traditional, family creamery (from father to son) Nikolaos Stavropoulos in Agios Andrianos, Nafplion we take fresh butter, Gruyere cheese, feta cheese, cream cheese, yoghurt, all made from local sheep’s milk.
The bread with yeast is made by the dearest mother-in-law, the mother of the owners, in a wood oven and the eggs are from her hens. We have only local honey. Sweet pies, orange pie, milk pie, chocolate pie, bougatsa, pancakes, and vanilla-chocolate cake. Biscuits, cookies, bread sticks with carrot or gruyere cheese.
Savory pies, tempelotyropita, spinach pie and omelet are made by me and the girls, who work at the hotel, well, usually by the girls. Homemade seasonal jams are made by Mum, my aunts and whoever has the will or the mood (guests included).
I forgot…we have delicious Cretan ntakos, classic with tomato and our cheese and alternatively with cheese and tomato jam…just PERFECT! I make this jam myself as well as another with beetroot and green apple.
Oh, I forgot to introduce myself, I am Demetra, the lovely wife (at least he says so) of one of the brother owners of the Adiandi and Amymone. The other brother, Nikos Stavropoulos makes our fantastic cheese. We also serve various seasonal fruit. You can have your favorite kind of coffee, tea and other herbs, fresh orange juice (the oranges are from our orchard and particularly the dowry provided by my father).
We serve three kinds of cured meat and in heavy winter frumenty soup. Our breakfast is served on buffet from early in the morning till late at noon (for the Greeks who stay out late) in our breakfast room or in your room.
Our recipes :
1 packet of fillo pastry sheets
2 cups of yoghurt 2% fat
1 cup of sugar (I use almost 2 cups because I don’t add syrup)
1 glass of corn oil
1 baking powder bag
Vanilla (1 or 2)
I don’t add syrup but I use the zest of 4 oranges and in the mixture I pour ¾ cup orange juice.
We put all the ingredients in a bowl, apart from the fillo pastry sheets, and we beat with wire whisk until the mixture is creamy. The fillo pastry sheets should be in room temperature. I cut them in rolls of 2 cm, unfold them, and bake them on a baking pan in preheated oven to 170 º Celsius for a while just to get crispy. I crush and add them to the mixture.
We pour the mixture in a greased baking pan 40×50 and bake at 170 º Celsius until it turns golden for about 30 minutes.
If you want syrup,
2 glasses of orange juice
1 glass of water
2 glasses of sugar
1 cinnamon stick (optionally)
Boil all the ingredients of the syrup together. Pour the hot syrup on a cold pie or vice versa. Don’t forget to remove 1 cup of sugar and the zest of 2 oranges from the mixture.
It is perfectly combined with ice cream.
1 cup of butter
1 cup of sugar
1 cup of flour sifted
1 cup of ground hazelnuts (optionally)
400 gr. couverture chocolate
150 gr. couverture chocolate drops
½ cup of cream milk
How to make it:
Mix all the ingredients together until creamy & then add the heated couverture. Pour the mixture in a greased baking pan N28 & bake at 180º Celsius for 20 minutes. Heat the cream milk & the chocolate drops in a pan or in the microwave oven, mix well until it turns into icing & pour on the chocolate pie.
Yoghurt-cheese pie (Tempelotyropita)
We need: 2 cups of yoghurt and ½ teaspoon baking soda
2-3 cups of feta cheese – 1 cup of cream cheese
½-1 cup of fresh milk
2 cups of maze flour or plain flour
Salt – pepper – 2 eggs (if you wish)
2 spoons of margarine
Optionally, we add fresh or dried herbs (oregano, parsley, thyme)
How to make it:
In a bowl we mix the yoghurt with the baking soda & wait 2 to 3 minutes until it rises. Then we add the cheese, milk salt, pepper, (eggs and herbs) & flour stirring very well. Grease a medium baking pan, pour in the mixture & add the margarine in pieces on top of it. We bake in a preheated oven at 170º Celsius for 45 minutes until the surface becomes golden brown.
